Sausage and Tomato Pie

You Will Need:-

• 1 pack of Harrogate or Yorkshire sausages
• 1 pack of shortcrust pastry
• 1 Tbs oil
• 1/2 lb tomatoes, sliced
• 1 tsp, Worcester sauce
• 1 med/large onion, sliced
• beaten egg to glaze
• good pinch of dried mixed herbs
• salt and ground pepper

Method

Divide the pastry and roll out 1/2 thinly to line an 8'' flan tin. Remove the sausage skins and mix the meat with the mixed herbs.

Fry the onion in the oil till soft and just starting to colour, add the tomatoes and cook till soft.

Add Worcester sauce and season to taste with salt and pepper.

Place 1/2 the sausage meat in the pastry case, top with the onion and tomato mixture, and add the remaining sausage meat.

Roll out the remaining pastry and cut into strips.

Damp the edge of the pastry case and place the pastry strips on the top in a lattice. Brush with beaten egg.

Bake for 35-40 minutes in a moderate oven-350F.

Serve hot or cold, with broccoli or salad.
