Rice, Sicilian Sausages, and Pan Fried Vegetables

Method

Fry the Sicilian sausages in a little olive oil until brown. Allow to cool. Cut into even round slices and put aside.

Remove the seeds from 1 red and 1 green pepper, cut into round slices of about half an inch thick.

Place the whole button mushrooms, peppers, and courgette into the pan (use the pan that the sausages were cooked in) adding no oil, fry until cooked (about ten minutes), stirring often.

Cook enough long grain rice for 2 as per the packet instructions.

Add the sausages to the mushrooms and peppers and add a little olive oil. Once the sausages are hot, turn the heat up and add the cooked rice, stirring all the time.

Once the rice has absorbed the juices and changed to a golden colour, turn off the heat and serve onto warmed plates.

Eat with warmed garlic/ciabatta bread and a glass of wine immediately.
